At Reesacat's request... here is my recipe for the best chips you'll ever eat.

Being me, they're also stupidly easy, because essentially I'm a lazy being who wants the least fuss possible in everything I do. :p

Ingredients:
Several large organic potatoes (I find one large, baking-sized, potato is usually enough for one person)
Organic extra-virgin coconut oil

Peel the potatoes, and chop them length-wise into strips. Make them as long or short as you like; I find longer ones work better, about .75cm diameter. You can make them as chunky or as skinny/french-fry like as you wish, just adjust baking time accordingly.

Spread them out on a baking tray with a good lip (to hold the oil on the tray)

Drop a few good dollops of coconut oil over them [if it's liquid, just drizzle it over till they're all well-coated]

Put them in the oven at about 180C

After 5mins or so toss them around so they're all well-coated in the oil

Bake until they're cooked and soft and yummy, around 20mins

You can also leave the skin on if you like chips with skin, doesn't really matter.

Sprinkle sea/rock salt over them at the end, or else when you coat them in oil works well too and it kind of bakes into them, mmmmm.



Easy peasy!! They get a lovely coconutty kind of a flavour and taste absolutely divine. A million billion times better than what you buy in a shop.

They're soooooooooooooo good. Barely justify a recipe, make it up as you go... that's just how I do them though. And it works sooo well. And given how cheap a potato is, it's not exactly gonna break the bank. ;)

Thank you, Dizz! I need a bit of a recipe to do something the first time-not a natural cook.

For those of us in USA-180C is 350F on our ovens.

Thx for the conversion, Reesecat. I think I would shake potatoes in a ziploc bag with a little melted coconut oil or EVOO, which works really well to coat things evenly before baking.

Mmmm good idea!

Definitely use coconut for these babies, just makes them taste incredible. Olive oil works too, but lacks that same flavour.

(Having said that, I'm making some tonight with olive oil because I've run out of coconut).
