Okay, Maurya, as far as I know, coriander is the seed that grows into the cilantro plant. Both are used in cooking. The seed mostly in spice mixes, and the leaves of the plant for garnish and flavor. I use both.

Such a shame I had to chuck most of my 'creation' last night because it had fallen apart so badly and stuck to everything. I am going to try it again and pan saute next time.

Zucchini, sweet potato, cilantro, mint, onion, spices....These fritters would make a fantastic light supper served with salmon and taziki..!!!

Islander, in answer to your question, I was born in Cape Town, Southern Africa and my family immigrated to Canada in 1967. I have spent most of my life in Canada, obviously, but would love to go back someday. I grew up with many cultures, a variety of foods, and many languages around me as my parents had many friends of different cultures...

This is taziki. Hope you get to try it! It's great.


Tzatziki - Cucumber Yogurt Dip

Ingredients:
  • 3 tbsp. olive oil
  • 1 tbsp. vinegar
  • 2 cloves garlic, minced finely
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 cup greek yogurt, strained
  • 1 cup sour cream
  • 2 cucumbers, peeled, seeded and diced
  • 1 tsp. chopped fresh dill
Preparation:

Combine olive oil, vinegar, garlic, salt, and pepper in a bowl. Mix until well combined. Using a whisk, blend the yogurt with the sour cream. Add the olive oil mixture to the yogurt mixture and mix well. Finally, add the cucumber and chopped fresh dill. Chill for at least two hours before serving.

...mellow, what a good idea! I am gonna try that tomorrow.
Planning on making my own kefir soon and forget about buying all this expensive organic yogurt...!!

We tried Tzatziki according to your recipe tonight. Delicious! Perhaps even more so, after it sits marinating in the fridge until tomorrow!

Glad you enjoyed it! Now you need to try it with the Zucchini fritters! If you are not a big zucchini eater, you can always substitute with carrots or potato's I would think. Probably be just as yummy!

(Lately I have been on a cooking jag so y'all will need to please indulge me!)
