    Default Hidden Sources of Gluten

Thank you Maurya for the link.

This is an excellent list of possible hidden sources of gluten (such as dried fruit and nuts might be dusted with flour to prevent sticking), smoke and smoke flavoring (often use barley and malt to capture the smoke flavor), and vitamins and herbal supplements.

Good list. Luckily, I don't use most of those... or if I do, they are home-grown, homade, or like the tamari soy sauce, labeled GF.

About the only red flag here for me is Liquid Smoke which I use once a year, maybe. Didn't know that dried spices like mustard could contain flour though. Why on earth isn't something like that required on the label?

Quite an extensive list. The one that jumped out at me was "canned tuna." Go figure?

Given the radioactivity level in tuna, I avoid it altogether now.

I did a search on canned tuna and cannot find anything that contains gluten. Definitely safe if only salt and water added. The vegetable broths tend to be soybean. The major brands that I checked are gluten free. The problem appears to lie in the flavored varieties. Many of these contain wheat/barley or other grains. I eat tuna very rarely. When I do I use pole caught, sustainable tongol tuna. This is supposed to have much lower levels of mercury. I have been concerned about the radiation but I eat it so rarely. I know bluefin is the big problem but when what I have is gone, will probably not buy any tuna again.
