    Its generally believed that raw vegetables are more nutritious. However, thats not always the case. Some veggies actually have high amounts of nutrients after cooking.

    This isnt the only reason you should cook your veggies. Some raw vegetables actually contain toxins that can cause health problems.
    With that said, many types of raw veggies and fruits can improve your health. A study published in the journal Frontiers of Psychology showed that people who ate raw foods had lower levels of depression and mental health problems

    This is good to know. I do cook them (yes, even kale), and the veggies in the dog food I make are cooked as well.

    I eat almost all my veggies raw. When I eat a meal that contains all cooked veggies, my digestive system gets real sluggish. Cooking veggies seems to diminish the amount of roughage, thus reducing the benefit that raw veggies provide in helping to keep food moving through the digestive system. I was not aware of the "toxin" on the leaves of green leafy veggies. Still don't understand how cooking would destroy the toxin. Need to do more research.

    Cooking sprouts seems to defeat the purpose - I thought raw and fresh were some of the benefits? I grow my own, and don't have any problems - commercially-grown sprouts may be more of a risk.

    Raw veggies are more nutritious than the cooked veggies but i cooked them too make it more tasty. I live to eat

    @Mr. Wizard, sounds like you may be missing out on some of the many nutritious benefits that vegetables confer. Of course, some vegetables are high in fiber, but you might benefit from adding more high-fiber items to your meals... nuts, seeds, legumes (beans of all kinds!) and fruit with skin on. I like adding sunflower seeds to oatmeal, stir-frys, anything that seems appropriate, because they're good for me and I like the texture. Oh, and popcorn! And the lycopene in cooked tomatoes!

    @Julieanne: it may be that bean sprouts are the only ones that need to be cooked. Not sure why.
