    People rarely ever give walnuts much consideration, favoring instead exotic superfoods from around the globe. Before you turn to foods with a massive environmental footprint because they have travelled many miles to get to your local store, you might want to reconsider walnuts.

    The diabetes connection is a bit tenuous but hey, I like walnuts, especially in a Waldorf salad: chopped apples, celery and raisins, dressed with mayo and served on a bed of lettuce. Add grapes and chicken chunks and you have a hearty summer lunch!

    I had learned a few years ago that the black walnut was the better choice for cancer fighting properties and other health benefits. I always buy black walnuts precrushed, in 12 oz packs, in the SM's baking isle, to be mixed in a dry "trail mix" bowl of sprouted almonds, chocolate or carob chips, with organic frozen black, blue, or raspberries, as the frozen berries gives the sensation of ice cream or sherbert minus the dairy (and sugar), (which I avoid due to plaque in my calcified carotid arteries due to many years of calcium and low quality dairy abuse).

    Recently, I brought the black walnuts to the attention of my health food co-op stocking clerk, asking him if he could order and make available organic black walnuts in a bulk dispensers, which would probably lower the price, as the 12 oz bag at the SM is close to $8.00. It's been quite a while with no results, so I think it's time for another reminder or a new request.

    I haven't made a Waldorf salad for years - thanks for the reminder Islander. After reading the article, last night I ate a large handful of walnuts with my two squares of dark chocolate. Delicious!

    The Waldorf salad sounds terrific. I've never had one because I'm allergic to walnuts and every other nut, except plain old peanuts.

    The celery and peanuts would give it crunch while the apples and raisins add a bit of sweetness. I'll bet that would work for you, Mr. Wizard.
