    If you can tolerate gluten, rye is one of the healthiest to eat, especially for helping maintain 'good' gut bacteria. Rye sourdough—used for baking rye bread—is rich in lactic acid bacteria that help the gut microbiome, the 'universe' of bacteria, and also control insulin metabolism, so reducing the risk for diabetes.

    It also triggers a positive chain reaction that lowers the amount of oxygen the heart muscles need, which may reduce the risk of stroke, researchers from the University of Eastern Finland say.

    I don't know about controlling insulin metabolism, because as a diabetic I avoid all grains as well as all sugars. Does the above advice sound counterintuitive to anybody else?

    It does sound counterintuitive. However, rye can be insulin friendly, making it a "better" choice for diabetics who choose to eat grains. Rye starch granules are formed in a way that significantly slows the rate at which starch is converted to sugar. And, unlike other wheat grains, rye does not have wheat germ agglutinin (WGA), which is the lectin in wheat that's responsible for wheat's anti-insulin properties. So, actually rye's not a bad choice for diabetics who want to splurge into grains occasionally.

    That's good to know. There are few things I like better than real Russian black bread! There used to be (probably still is; I haven't been that way in years) a Russian import store in southern NH that sold that wonderfu rye bread.
