No argument here, except that I wonder about the amount of pasta being consumed.

The Mediterranean covers a rather large area; even within Italy, northern and southern portions enjoy very different diets. In any case, pasta is very definitely a part of the so-called Mediterranean diet. On the rare occasions when I do cook pasta, I use a wheat-free, gluten-free brand. Tinkyada is one.

Kelp noodles could work well in place of any pasta. The ones I have used are not supposed to be heated, just rinsed in cold water and served cold.

I like zucchini noodles, especially for something like lasagna where you want your noodles to be wide. Don't forget, spaghetti squash is another option. Lots of choices!
