    Summary: Soybean oil, the most consumed cooking oil in the US, has been linked to neurological and metabolic alterations in mice. Soybean oil-fed mice showed decreased levels of oxytocin in the hypothalamus.

    Although the research failed to pinpoint the culprit in soybean oil causing the genetic brain changes, my theory is it all begins with genetically modified (GMO) soybeans. Monsanto introduced GMO soybeans in the U.S. in 1996. By 2019, about 95% of U.S. soybean crops was GMO. So, the problem starts with using GMO soybeans to extract the oil, and then further modifying the oil by drastically changing the fatty acid content, making it extremely high in oleic acid. It's a highly altered product that is widely used at home, in restaurants, and fast food joints because of its high heat content, allowing for cooking and deep frying at high temperatures.

    From what I've learned about oxytocin and its relation to the hypothalamus, I would venture to guess that our overconsumption of soybean oil in the vast quantity of fast food we consume might contribute to the lack of empathy and compassion that we increasingly see in society today. And it's one more reason why I am not enthusiastic about eating out.

    Soybean oil is not consumed in isolation. It is possible to consume soybean oil, corn oil, and cottonseed oil all in the same day, on a regular basis, depending on one's eating habits. And, unfortunately all 3 oils are derived from genetically modified sources, as 90% or higher of U.S. soybeans, corn, and cotton crops is GMO. Cottonseed oil--which is a byproduct of cotton farming--is in everything, including peanut butter, crackers, chips, etc. Oh, and "Crisco" is short for "crystallized cottonseed oil." Corn oil is widely used for at-home cooking. So, while the study focuses on soybean oil only, it is possible for many people to consume all 3 genetically modified crop oils everyday. While studies focus on one substance at a time, humans don't consume any one thing in isolation.

    You're absolutely right, Mr. Wizard, and thanks for pointing out that out. Your last sentence says it all. Very little that we consume is eaten in isolation. BTW, I never did know what Crisco stood for!
