    A cruciferous vegetable, cauliflower is formed of a mass of tiny, tightly-packed flower heads (known as curds). These flowers sprout from a thick central stem to form a single, round head. Most cauliflowers are white, but it’s possible to buy green and purple varieties, as well as the sweeter romanesco cauliflower, with its characteristic pointed florets.
    Over recent years, cauliflower has found culinary fame being used as a ‘rice’ alternative, served as ‘steaks’ or taking centre stage in a roast. It’s an easy vegetable to add to your diet – enjoy raw, steamed, puréed, mashed, grated or roasted.

    It's very good to have some of the benefits and nutrients of cauliflower enumerated like this. In the winter (haha, winter so to speak) here, I usually buy three heads of organic cauliflower and/or broccoli. In the longer summer period they aren't available, except for broccoil rabe, or rapini, which I'm not a big fan of. Thanks, Julieanne! Now I have to go check on the broccoli I'm cooking. (Really.)

    I never really thought of cauliflower as particularly nutritious maybe because it is white. I was wrong! I've learned to like it in new ways, and cauliflower rice can be the basis for a meal.

    I always struggled with how to add cauliflower to my diet. This article suggest chopping up raw cauli and adding it to cole slaw. Never thought of that, and I eat plenty of slaw. Nice tip!!

    I use broccoli and cauliflower as the primary ingredients in a dish I created. I fill a 13 x 9 pan with barely cooked broccoli and cauliflower florettes, about a pound each. Over them I pour a sauce of eggs, mayonnaise, lots of grated cheese and a splash of cream to make it pourable. Bake for 20 minutes, scatter seasoned breadcrumbs generously over the top, slide back in the oven for 10 minutes and voilà!

    Mm, that sounds good! I make broccoli and cauliflower soup with sauteed onions and chicken stock. The rest will go into a cauliflower rice based meal. I'll have to try your recipe - a few more details would help.
