    Default Islander's Borscht

    I'm of Eastern European extraction (my mother was born in Lithuania) so although I think this is the best borscht recipe EVAR, I am, of course, biased. Every Eastern European has a version of this. Here's mine. All ingredients approximate, of course, and everything organic.

    1 # leanest ground beef
    1 large onion, diced
    about 1/2 head cabbage, finely shredded
    2# beets + liquid (if using canned beets, save the liquid), shredded
    1 quart beef stock
    salt & pepper to taste

    Brown beef and onion in butter. Add cabbage and some of beet liquid; cover and simmer 10-15 minutes, until cabbage is tender. Slip skins off beets, shred, add to pot with cooking water. Add rest of ingredients and seasonings. Simmer for a bit so flavors blend. Even better the next day!

    Pass sour cream as a garnish. In Lithuana this is often served with a side of tiny boiled new potatoes.

    Sounds marvey Islander! My Mennonite ex-husband's family who are originally Russian use red cabbage and beets. Similar recipe but no beef (actually no meat bits at all), use chicken stock and sour cream is a must...! Eaten with tiny 'kringel' buns and butter....YUMMMY!!

    I was looking through the gluten free threads and found this. My husband is half Ukranian and half German. He's eager to try this one.

    1970's recipes are the best; bar none. Is there something wrong with a little Chateaubriand, with iceberg lettuce and green goddess? Ahhhh...

    Chateaubriand with béarnaise sauce: to die for....

    Borscht, however, is older than time.
